Lavender Hot Chocolate

It's no secret that I'm obsessed with lavender. Strangely, I remember that years ago I did not like lavender at all and avoided anything lavender scented like the plague! When I began using essential oils and read about the many benefits of lavender oil I reluctantly bought a bottle and to my surprise it quickly became one of my favorites!

I still love to diffuse lavender, but I also love lavender flavored food. One of my favorite coffee shops near work sells lavender lemonade - be still my heart! And while I love(loveLOVE) Starbucks, the best London Fog lattes I've ever had have all featured lavender syrup, not vanilla.

I found lavender extract at my grocery store before quarantining began and I've really enjoyed using it in my own kitchen. Last month I made a coworker a gorgeous lavender vanilla birthday cake that was to die for, and I've made my share of London Fog lattes, too. 

This recipe marries lavender with chocolate and is super easy to boot.

Lavender Hot Chocolate

1/4 cup chocolate chips
2 cups milk
1 tsp lavender extract
1/2 tsp vanilla extract

Heat milk in microwave until hot, 2 - 2 1/2 minutes. Place chocolate chips in a mixing bowl, and add enough hot milk to cover. Let sit for 1 minute; use a whisk to stir, adding hot milk in small increments, until chocolate is melted and fully blended. Add extracts and stir. Pour into 2 mugs and serve.

Note: I used NestlĂ© Simply Delicious Chocolate Chips (which are grain, legume, and dairy free with only 3 ingredients - sugar, chocolate, and cocoa butter) and almond milk in this recipe.
